On this medal Ceres is portrayed by Thangam Philip, the principal of the Institute of Hotel Management, Catering Technology and Applied Nutrition in Bombay, the first and largest institute of its kind in Asia. For over twenty years Miss Philip has played a significant role as a food educator, training students in imaginative largescale catering for industry, schools and hospitals, and developing courses for housewives to teach thern nutritionally sound culinary skills. The Bombay Institute appears above the portrait: to the right is a row of "nan", one of India's most popular breads.
