"Eichstätt (sometimes spelled Eichstädt) is a town located along the Altmühl river, between Munich and Nuremberg. It is the capital of the district of Eichstätt in the federal state of Bavaria, Germany. The Cathedral of Our Lady of the Assumption is the seat of the Diocese of Eichstätt, and the town is also home to the Catholic University of Eichstätt-Ingolstadt (de)...The town lies on the basin of a Jurassic-era sea. The quarries there today are being extensively excavated for their wealth of fossils" (according to https://fr.wikipedia.org/wiki/Eichst%C3%A4tt).
It was in such quarries that the first fossils of Archaeopteryx were found, the first feathered dinosaur discovered in 1861 in a quarry at Solnhofen (some 20 km away). Archaeopteryx was long considered the ancestor of birds, but is now thought to belong to a different line of dinosaurs. It is this fossil, currently on display in Berlin, that is depicted on the medal:
